Instructions
- 1. Heat oil in a pan and add cumin seeds.
- 2. Add chopped onions and cook until golden brown.
- 3. Add ginger-garlic paste and cook until the raw smell disappears.
- 4. Add chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes are soft and the oil separates from the mixture.
- 5. Gently add the hard-boiled eggs to the curry and cook for a few minutes to allow the flavors to blend.
- 6. Adjust salt and add water if needed to reach desired consistency.
- 7. Garnish with coriander leaves.
- 8. Serve hot with rice or roti.
