Instructions
- 1. Cook rice as per package instructions and set aside.
- 2. Heat oil in a pan, add cumin seeds and let them splutter.
- 3. Add chopped onions and sauté until translucent.
- 4. Add chopped tomatoes and cook until soft.
- 5. Add coriander powder, turmeric powder, red chili powder, and salt. Stir well.
- 6. Add the mixed vegetables and cook for 5-7 minutes.
- 7. Grind grated coconut and green chilies into a paste and add to the vegetables.
- 8. Cook until the vegetables are tender and the kurma has thickened.
- 9. Garnish with coriander leaves and serve with rice.
