Instructions

  1. 1. Cook rice as per package instructions and set aside.
  2. 2. Heat oil in a pan, add cumin seeds and let them splutter.
  3. 3. Add chopped onions and sauté until translucent.
  4. 4. Add chopped tomatoes and cook until soft.
  5. 5. Add coriander powder, turmeric powder, red chili powder, and salt. Stir well.
  6. 6. Add the mixed vegetables and cook for 5-7 minutes.
  7. 7. Grind grated coconut and green chilies into a paste and add to the vegetables.
  8. 8. Cook until the vegetables are tender and the kurma has thickened.
  9. 9. Garnish with coriander leaves and serve with rice.
