Instructions

  1. 1. Marinate the mutton with yogurt, turmeric powder, red chili powder, and salt for at least 1 hour.
  2. 2. Heat ghee or oil in a large pan. Add sliced onions and sauté until golden brown.
  3. 3. Add ginger-garlic paste and cook until the raw smell disappears.
  4. 4. Add chopped tomatoes and cook until they turn soft.
  5. 5. Add marinated mutton and biryani masala. Cook until the mutton is browned and tender.
  6. 6. Cook rice separately until 70% done.
  7. 7. Layer the partially cooked rice over the mutton mixture. Add saffron strands, chopped coriander, and mint leaves.
  8. 8. Cover and cook on low heat until the rice is fully cooked and the flavors meld together.
  9. 9. Serve hot with raita or salad.
