Instructions
- 1. Rinse the toor dal and cook it in a pressure cooker with 2 cups of water for 3-4 whistles or until soft.
- 2. Heat oil in a pan and add mustard seeds. Let them splutter.
- 3. Add cumin seeds, fenugreek seeds, and curry leaves. Sauté for a minute.
- 4. Add chopped onions and sauté until translucent.
- 5. Add chopped tomatoes and cook until they turn soft.
- 6. Add the mixed vegetables, turmeric powder, and sambar powder. Stir well.
- 7. Add the cooked toor dal and adjust the consistency with water. Simmer for 10-15 minutes.
- 8. Add salt to taste and cook for another 5 minutes.
- 9. Garnish with coriander leaves before serving.
