Instructions

  1. 1. Rinse the toor dal and cook it in a pressure cooker with 2 cups of water for 3-4 whistles or until soft.
  2. 2. Heat oil in a pan and add mustard seeds. Let them splutter.
  3. 3. Add cumin seeds, fenugreek seeds, and curry leaves. Sauté for a minute.
  4. 4. Add chopped onions and sauté until translucent.
  5. 5. Add chopped tomatoes and cook until they turn soft.
  6. 6. Add the mixed vegetables, turmeric powder, and sambar powder. Stir well.
  7. 7. Add the cooked toor dal and adjust the consistency with water. Simmer for 10-15 minutes.
  8. 8. Add salt to taste and cook for another 5 minutes.
  9. 9. Garnish with coriander leaves before serving.
